Mussels with Cider, Shallots, and Bacon

Instructions
  1. Heat a large saucepan over medium heat.
  2. Add butter and olive oil. Cook until bubbling.
  3. Add chopped bacon and cook for 4-5 minutes.
  4. Place shallots, garlic, and thyme leaves in next and cook for 2-3 more minutes.
  5. Turn the heat up to high and add cider. Bring to a boil.
  6. Add mustard and mussels to the pot. Cover and cook for three minutes giving the pot a good shake a few times during cooking time.
  7. Remove pan from heat and stir in cream, salt, pepper, and parsley.
