Ingredients

head Romaine lettuce
coarsely chopped

spring mix salad

can artichoke hearts
drained, rinsed, and quartered

roasted red pepper
cut into strips

Kalamata olives
cut in half

can chickpeas
drained and rinsed

pine nuts

For the dressing

tablespoons extra virgin olive oil or 1tahini + 1water

yellow mustard

apple cider vinegar

Instructions
In a small jar or bowl, combine the dressing ingredients, shaking or whisking to combine.
In a large bowl, combine lettuce, artichoke hearts, roasted red peppers, olives, and chickpeas.
Right before serving, pour some of the dressing and toss to combine.
Season with salt and pepper and top with pine nuts.
