  1. Whisk together oil, lemon juice, vinegar, garlic, oregano, and mint in a large bowl. Season with salt and pepper to taste.
  2. Add cheese, zucchini, onion, and tomatoes, and toss to combine.
  3. Let cheese and vegetables marinate in the dressing at least one hour.
  4. If using skewers, thread cheese and veggies onto skewers.
  5. Heat grill pan on stove top or BBQ grill to medium heat.
  6. For grill pan: spray pan with cooking spray. Add veggies and cheese in a single on grill pan. Cook 3-5 minutes and then flip veggies and cheese. Remove from pan and place on platter. Squeeze lemon wedges over veggies and cheese and serve immediately with tzatziki and warm pita.
  7. For BBQ: Clean and oil the grilling grate. Grill skewers or veggies and cheese in a grill basket over direct heat until cheese browns and zucchini has slightly softened, 3-5 minutes per side. Remove skewers or grill basket from the grill to a serving platter. Squeeze lemon wedges over skewers and serve immediately with tzatziki and warm pita.
Recipe Notes

You will need a grill pan, grill basket, or wooden skewers, soaked water for at least 30 minutes prior to use to make this recipe.
