  1. Place cooked rice in a medium bowl. Add cranberries, raisins, almonds, green onions, and stir to combine.
  2. In a small bowl or canning jar, combine olive oil, vinegar, lemon, salt, and pepper and whisk or shake dressing. Pour over rice mixture. Top with chopped parsley.
  3. Can be served warm, room temperature, or cold.
