  1. Make dressing by combining olive oil, red wine vinegar, salt, pepper, cayenne, and Italian seasoning in a small bowl or Mason jar. Stir or shake to combine. Set dressing aside.
  2. Divide Spring mix salad greens evenly among four plates.
  3. Top each plate with 1/4 of the olives, pine nuts, red onion, feta cheese, and cherry tomatoes.
  4. Gently drizzle the dressing evenly among the four salads.
  5. Season with salt and pepper.
  6. Serve immediately.
Recipe Notes

Note: You can use a roasted red pepper from a jar or roast a fresh pepper on a grill, under the broiler, or over the flame of gas stove. Roast until the skin is charred nearly all over. Place in a brown paper bag or in a covered bowl for 10 minutes to steam. The skin will peel away easily. Remove stem and seeds.
