Ingredients
Spicy Yogurt Sauce
Instructions
  1. Preheat the oven to 425 degrees F. Spray a heavy baking sheet with vegetable oil cooking spray.
  2. In a medium bowl, toss together the red onion, red pepper, zucchini, garbanzo beans, oil, cumin, Italian seasoning and salt.
  3. Spread the mixture in a single layer on the baking sheet. Roast until the vegetables are golden and tender, 25 to 30 minutes. Toss mixture after 15 minutes of cooking time.
  4. To assemble bowls, add ½ cup of cooked farro to four bowls.
  5. Top with ¼ of the roasted vegetable and chickpea mixture.
  6. Drizzle with Spicy Yogurt Sauce, sliced olives and feta cheese.
Spicy Yogurt Sauce
  1. In a small bowl, mix together the yogurt, lime juice, honey, and chipotle pepper until smooth.
