Ingredients

butter

tablespoon
olive oil
8
ounces
bacon
chopped
2
shallots
peeled and finely chopped
2
cloves
garlic
finely chopped
2
teaspoon
fresh thyme leaves
1
cup
apple cider
1
tablespoon
whole-grain mustard
2
tablespoons
cream
I used cashew cream
2
pounds
mussels
scrubbed and beards removed
salt
pepper
Italian parsley
chopped
Instructions
Heat a large saucepan over medium heat.
Add butter and olive oil. Cook until bubbling.
Add chopped bacon and cook for 4-5 minutes.
Place shallots, garlic, and thyme leaves in next and cook for 2-3 more minutes.
Turn the heat up to high and add cider. Bring to a boil.
Add mustard and mussels to the pot. Cover and cook for three minutes giving the pot a good shake a few times during cooking time.
Remove pan from heat and stir in cream, salt, pepper, and parsley.
