  1. Sauté zucchini and onion in olive oil for 4-5 minutes. Season with salt and pepper.
  2. In a small bowl, lightly beat eggs.
  3. Toast bread and lightly butter.
  4. Add eggs to zucchini and onion mixture and tilt pan around so that eggs are spread evenly in pan.
  5. Season eggs with salt and pepper. After one minute, using a spatula, gently move eggs around as they start to set. Cook eggs for another minute or two until they are just cooked.
  6. Place half of egg mixture on each slice of toast. Top with chopped tomatoes and herbs.
