  1. In a wok or nonstick sauté pan, melt butter over medium-low heat, and add onions. Cook, stirring, until the onions, peas, and carrots, about 2 minutes. Add kimchi and kimchi juice, and stir until it comes to a boil, about 3 minutes.
  2. Add the rice to the pan and stir to incorporate. With heat set to medium, cook, stirring, until the rice has absorbed the sauce, about 3-5 minutes. Stir in soy sauce and sesame oil. Taste, and adjust with more soy sauce, sesame oil or kimchi juice.
  3. Serve hot, with a fried egg on top or scramble an egg and mix into rice just before serving.
