Crisp Zucchini Chips
sliced ¼” thin
Italian seasoned breadcrumbs
grated or shredded
Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
Beat two eggs in a small bowl. In a pie pan combine, breadcrumbs, panko, Parmesan, Italian seasoning, and cayenne pepper.
Using a fork place zucchini slices into egg mixture and shake off extra egg wash before placing into plate of breadcrumbs and coating both sides.
Place on parchment paper covered baking sheet. Repeat with all the zucchini slices. Lightly spray zucchini slices with cooking oil spray before placing in oven.
Bake for 10 minutes and then rotate the baking sheet and bake for another 7-10 minutes until the zucchini chips are golden and crisp.
